The buzz about phenols

Why we need these purple wonders.

Phenols

Phenols are a large class of phytonutrients that has been the subject of extensive research as a disease preventive. Phenols protect plants from oxidative damage and may perform the same function for humans. The blue, blue-red, and violet colorations seen in berries, grapes, and purple eggplant are due to their phenolic content. Bilberries, for example, are high in phenolic anthocyanidins and are red in color. The outstanding phytonutrient feature of phenols is their ability to block specific enzymes that cause inflammation. They also modify the prostaglandin pathways and thereby may prevent platelets from clumping.

Maple syrup good for you

Pure maple syrup full of antioxidants.

Pure maple syrup surprisingly healthful

A University of Rhode Island study has discovered 34 new healthful compounds in pure maple syrup. Similar research last year found 20 beneficial compounds in the sweet tree sap. This research involves pure maple syrup—not the inexpensive kind normally found in grocery stores that is little more than flavored high fructose corn syrup. Natural maple syrup is slightly thinner but significantly sweeter than its artificial counterpart, and much more healthful.

Most of maple syrup’s goodness is in the form of antioxidant and anti-inflammatory agents, including phenols such as Quebecol, named after the Canadian city of Quebec, which is in an area of high maple syrup production. Researchers say that the antioxidants in maple syrup include some beneficial compounds normally found in berries, tea, and flaxseed.

Copper

Copper is a macromineral. It is present in all body tissues, but is particularly concentrated in the liver and brain. Copper aids in the manufacture of collagen and hemoglobin, and, along with iron, is necessary for the synthesis of oxygen in red blood cells. It also acts as an antioxidant, increases iron absorption, and serves as a catalyst for a variety of enzymatic reactions.

The best food sources for copper include dark green, leafy vegetables, eggs, organ meats, poultry, nuts, shellfish, and whole grain breads and cereals. Although severe copper deficiencies are rare, minor deficiencies may lead to anemia, dermatitis, diarrhea, edema, fatigue, impaired collagen production, labored respiration, and tissue and blood vessel damage. Diseases prevented by the therapeutic benefits of copper include arthritis, atherosclerosis (preventive), brain and nerve dysfunctions, Crohn's disease, high cholesterol, impaired immunity, infertility, and lupus. Zinc

Zinc is one of the macrominerals. It is found in brewer's yeast, bone meal, wheat germ, beans, nuts, seeds, fish, and meat, especially liver. It is most effective when taken with Vitamin A, calcium, and copper. Zinc is necessary for healing and the development of new cells. It is important to general growth, reproductive organs, and normal functioning of prostate gland. Zinc is an essential part of more than 100 enzymes involved in digestion, metabolism, reproduction, and wound healing. Diseases prevented or helped by the therapeutic benefits of zinc include: acne, ADHD, atherosclerosis (preventive), birth defects (preventive), benign prostate hyperplasia (BPH), canker sores, Crohn's disease, diabetes, ear infections, eczema, herpes recurrent infection, rheumatoid arthritis, and ulcerative colitis.
