Chicory (Cichorium intybus) is a perennial herb in the dairy family with long roots, deep green leaves, and bluish flowers. Chicory is also called succory, chicory herb, chicory root, blue sailors, or hendibeh in other parts of the world. It grows wild in the Near East, Europe, northern and southern Africa, North and South America, Australia, and New Zealand.
